Sinigang na Bangus sa Bayabas
Ingredients:
large bangus fish
ripe bayabas (guavas)
onion, quartered
kangkong
chili
salt
Cookware:
wok, kitchen shears
Procedure:
Remove scales, gills, and innards of bangus. Cut fins and tails.
Wash the fish
thoroughly. Slice diagonally. Set aside.
Wash each guava. Trim, cut into quarters, and remove seeds.
Put guava meat and onion in wok and and 8 cups of water. Bring to boil and simmer for about 20 minutes or until guava start to disintegrate.
Coarsely mash guava meat with ladle and simmer for another 3 minutes.
Season with salt to taste. Add more water if required.
Add kangkong stalks and slic
ed bangus. Cook for 5 minutes.
Add kangkong leaves and chili. Cook for onther 3 minutes or until bangus is cooked.
Serve hot.
